From decadent chocolate oozing over air-whipped cake to sugar coated, fresh raspberries stacked luxuriously over white chocolate melts, your heart will be racing as you try and choose from the array of choices Jacinta has freshly baked.

Jacinta, owner and founder of The Cupcake Canteen (the cutest van in town), is not just a run of the mill cake maker. She creates smiles through her sweets. She sells taste explosions for a living. Her passion and drive outshines many business women I have met and her customer service is second to none. I guess that’s the kind of business you create when you find your dream and live your dream.

I asked this creator, entrepreneur, Queen of hand-baked, Mum of Max and achiever of dreams, to give us a little insight to her life, her business and to her world, with 6 questions and 6 answers. Here are the results…

How long has the cupcake van been up and running?

The Cupcake Canteen started in March this year but has been a dream of mine for 10 years when I first started baking cupcakes for my son’s birthday.

What was the catalyst for opening such a yummy venture?

My love of baking! My Grandma and Nana were the ones who introduced me to baking when I was little. I spent many school holidays in their kitchens baking up a storm. My brothers still tease me about my ‘rock cakes’. 

Tell the truth, do you taste test every flavour?

Absolutely, but most of my tasting is to ensure that every cupcake batch is cooked correctly and no ingredients have been forgotten. By the end of my baking marathon I have used every spoon in the kitchen and there are a few empty cupcake wrappers!

What is the best part about owning a store on wheels?

The freedom of being able to visit various markets around the Sunshine Coast and meeting some wonderful Sunny Coast locals. The ultimate dream would to one day have a shop front in beautiful Noosa but I would also absolutely love to travel around Australia with Max and my little cupcake trailer!

How do you balance life being a working Mum to Max?

Maxi is my biggest supporter. If I am ever having any doubting moments he is always first to say ‘but this is your dream, Mummy’. I am also extremely lucky to have a very supportive family who help out. Without them, The Cupcake Canteen wouldn’t be possible!

What is the funniest thing that has happened in business so far?

One Saturday at the Eumundi Market, a young girl stopped at my stall and ooooooed and ahhhhed over my cupcake display. Finally she walked away but at the last minute before joining her family she yelled out on top note, ‘You are an Artist!’ It made everyone laugh and really made my day!
